Baked Oatmeal

Quantity: 1 9x5x3 inch loaf pan


Ingredients

2 cups old fashioned oats
1 1/2 tsp baking powder
1/2 tsp salt
2 tbsp flax seeds (optional)
2 eggs beaten
1 cup milk (or substitute)
1/4 cup packed coconut sugar (or honey)
1/4 cup applesauce (optional)
1/4 cup oil (or none or 1/8 cup if using applesauce)
1 1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1 tsp vanilla


Directions

  • Preheat oven to 325F.
  • Grease loaf pan (or use parchment paper).
  • Combine oats, baking power, salt, and flax.
  • Combine eggs, milk, sugar, oil, cinnamon, ginger, nutmeg, and vanilla.
  • Pour over oat mixture and blend.
  • Pour into loaf pan (can set overnight in fridge).
  • Bake at 325F uncovered for 40-45 minutes.
  • Can be served with yogurt, fruit, nuts and milk.

French Toast

Quantity: 4 people

 


Ingredients

2 eggs
½ cup milk
¼ tsp vanilla
Pinch of salt
Cinnamon
Butter/Oil
Bread (sliced)

Directions

  • Combine the eggs, milk, vanilla, salt and cinnamon.
  • Soak the bread in the mixture then cook over medium-low to medium heat, using butter or oil in the pan. Flip when first side is no longer soggy.

Oatmeal

Quantity: 1 person

 


Ingredients

2/3 cup water or milk
Dash of salt
1/3 cup oats

Directions

  • Boil water and salt in covered saucepan; stir in oats.
  • Return to boil.
  • Reduce heat and simmer.
  • Cook uncovered for 10-15 minutes stirring occasionally; remove from heat.
  • Optional: Cover and let stand until desired thickness is reached.
    • For creamer oatmeal, combine water, salt and oats; bring to boil. Cook as directed.
    • For thicker oatmeal, use less water.

Pancakes

Quantity: 12

 


Ingredients

2 eggs
2 cups milk/yogurt
2 tsp baking soda
2 tsp baking powder
2 cups flour (whole-wheat, all-purpose, or mix)
5 tbsp vegetable oil (can decrease this if desired)
1 cup mashed very ripe bananas (optional)
fruit

Directions

  • Put butter/oil on pan.
  • Cook over medium low.

Omelette

Quantity: 1

 


FILLING

Ingredients

Onion
Garlic
Salt
Green Onion
Meat already cooked (optional)
Veggies (i.e. peppers, tomato, asparagus, broccoli)
Mushrooms
Basil
Oregano
Oil

Directions

  • Heat oil in a small skillet/frying pan to cover the whole surface.
  • Add onion and salt.
  • Add garlic.
  • Add the veggies, mushrooms and salt.
  • Add the basil and oregano to taste.
  • Add the meat.
  • Set the mixture aside.

 


EGG

Ingredients

2 eggs
Salt
Pepper
Rosemary
Thyme
Parsley
Oil or butter
Cheese

Directions

  • Grate the cheese.
  • Beat the eggs in a small bowl.
  • Add the salt, pepper, rosemary, thyme and parsley to taste.
  • Heat oil or butter in a small skillet/frying pan to cover the whole surface.
  • Pour egg mixture in and let it solidify. You may have to shake the pan around a little so the liquid can get to the bottom.
  • When almost solidified, sprinkle the cheese.
  • When cheese is almost melted, pour the filling on one half of the egg.
  • Add some more salt and pepper if desire.
  • Fold the other half of the egg on top.
