*Note: This recipe will fill the instant pot to the max. I’ve had trouble getting it to work, so sometimes need to transfer to cook with stovetop instead. Otherwise, I half the recipe for instant pot to play it safe.
1 tbsp olive oil 1 large onion, minced 4 cloves to 1 head garlic, minced 4 cups carrots, grated 2 Costco jars (marinara or tomato sauce) 860ml 1 28oz can diced tomatoes 1/2 tsp red pepper flakes 1 tbsp + 1 tsp dried basil 1 tbsp + 1 tsp dried oregano 1 tsp pepper 2 tbsp coconut sugar 5 cups water 2.5 cups red lentils, rinsed and drained salt, to taste (may not need)
Directions
In the IP, saute onion until soft.
Saute garlic for 30sec-1min.
Add carrots and stir, cooking for 3-4min more.
Add marinara sauce and stir to coat.
Add remaining ingredients and mix well.
On IP, select Manual (high) for 25min. If the IP isn’t able to start because it is too full, transfer to a large pot and cook on stove for 20min or until lentils are soft.
2 1/2 -4 lbs pork baby back ribs (cut into smaller pieces) 1 onion, minced 1 pear, peeled and diced 2 ½ cups ketchup 1 tbsp chili powder ½ tbsp smoked paprika 2 tsp dried oregano ¼ cup honey or date paste 2 tbsp apple cider vinegar 2 tsp coconut aminos Sea salt Freshly ground black pepper
Ketchup (Whisk together; makes approx 3 cups) 2 cans (12 oz) tomato paste 4 tbsp vinegar or lemon juice 1/2 tsp dry mustard 2/3 cup water 1/2 tsp cinnamon 1/2 tsp salt 2 pinch ground cloves 2 pinch ground allspice 1/4 tsp cayenne pepper (optional)
Directions
If you want to brown the ribs, season with salt and pepper, then put in oven at 400F for 10-12 min per side.
In a bowl, combine rest of ingredients, and season with salt and pepper.
Put ribs in slow cooker and pour sauce on top, ensuring all the meat is coated.
Preheat oven to 425F. Line a baking sheet with parchment paper.
Bake chicken wings with salt and pepper for 35min.
While cooking, mix rest of ingredients except for sesame seeds and green onion in a small pot. Heat over medium heat to boil, then simmer and thicken with baking powder.
When wings are finished baking, add sesame seeds and green onion to sauce.
Mix wings in the sauce and coat well.
Depending on done-ness of chicken wings, bake at 375F for 10min, then broil for 2-3min. Or just broil for 5min.
FOR SAUCY
Preheat oven to 350F.
Salt and pepper the chicken wings.
Combine rest of ingredients for sauce together. Mix chicken wings in the sauce.
Bake for 30min or more until cooked, stirring occasionally.
